| Dr. Bruno Keller received his diploma (BS degree) in
agronomy and food technology from the Swiss Federal Institute of Technology
in Zurich Switzerland. He then moved to Madison, Wisconsin where he
graduated from the UW in Madison with a Ph.D. degree in dairy technology
and bacteriology.
His exposure to the dairy industry included positions in R &
D at Land O’Lakes Inc., a large and integrated dairy cooperative,
and responsibility in product development and technical services/
marketing for a dairy supply company, Dairyland Food Labs.
Since 1980 he is the owner/president of Formulated Foods Consulting
providing advisory services to the dairy industry on product/process
development, trouble shooting, productivity improvement, QC/QA procedures,
HACCP programs, personnel training, marketing strategies, product
development/diversification or line extensions.
The emphasis of consulting work performed is directed at the practical
day to day production work. It covers all aspects from milk quality,
ingredient selection, process development, starter culture programs,
storage stability studies, and product distribution aspects with
particular attention to microbiological/public health concerns.
In the last 15 years he has had substantial exposure to work assignments
in developing countries and has worked in very large high tech plants
as well as dealt with very small village based operations where
simple but comprehensive dairy processing aspects needed to be addressed.
Overall his expertise can provide needed assistance where practical
production problems need to be evaluated in a broad context of dairy
